Salt water fish
GURNARD
Recognized by its large fins, narrowing body and large, armored head. Gurnards can “walk” along the sea bed using the spines on their breast fin. They can weigh just over 1 kg.
Fish facts
Also known as sea robins.
How to cook gurnard
A relatively unfamiliar fish on the plate, with a strange appearance, but it can be a good eating experience. If you’re out fishing, don’t throw this one back in.
Treat the fillets as you would fillets of perch or pike-perch. Fry or grill them to produce an attractive, great-tasting surface.
Gurnard is good all year round.
The classic
Filleted and triple coated with grated cheese.
Conservation status:
Green.
