Game meat often contains a minimum of fat and therefore freezes well. Any time of year is the right time to go hunting in your well-stocked freezer.
Game generally has a low fat content, which means that keeping a frozen joint or fillet of venison or shoulder of moose in the freezer for as long as two years (!) isn’t a problem. Wild boar meat is slightly fattier, but will still keep well for up to a year.
However, it is important to seal cuts of meat in plastic and to remove any air (oxygen) which is what causes it to dry out. If you vacuum pack your game, it will keep even longer.
